Ingredients
  

  • 1 egg
  • 1 tbsp sugar if you will make sweet crêpes
  • pinch salt
  • 200 ml milk
  • 100 g all purpose flour
  • vegetable oil for baking
  • Nutella

Instructions
 

  • Mix the Batter: In a large bowl, whisk together the flour, milk, egg, sugar (if making sweet crêpes), and salt until smooth. The batter should be the consistency of heavy cream. (Note: I always start with the egg, whisking it with sugar and salt, then adding the flour, and then in two 100ml steps, I add the milk. When the flour is added, the batter is very thick; with 100ml of milk, a creamy consistency is formed, and the remaining milk makes the batter fluid. This method ensures no lumps are formed.)
  • If you have time: Let It Rest: Cover the batter and let it rest in the refrigerator for at least 20 minutes. This allows the flour to fully hydrate, making the crêpes more tender. I usually don't let the batter rest, and the crêpes still taste great!
  • Prep Your Pan: Heat a non-stick skillet over medium heat. Add a small pat of oil to coat the pan lightly.
  • Pour and Swirl: Pour about 1/4 of the batter into the center of the pan. Quickly lift the pan off the heat, tilting and rotating it, to spread the batter thinly across the bottom.
  • Cook Until Golden: Return the pan to the heat and cook until the edges of the crêpe begin to lightly brown (about 1 minute).
  • Flip and Cook: Use a spatula to gently flip the crêpe and cook the other side for another 30 seconds to a minute, or until lightly golden.
  • Fill and Fold: I fill the crêpes as soon as I flip them over, right in the pan, and then fold the crêpe together. However, you can also take the crêpes out of the pan and fill and fold them afterward.
  • Repeat: Repeat with the remaining batter, adding more oil to the pan as needed.

Notes

Tip:

For sweet crêpes, you can add a splash of vanilla extract to the batter.
