Bulgur Salad: A Wholesome Middle Eastern Delight

Vegan Bulgur salad – Kisir
Ingredients
- 1 cup Bulgur
- 2 cup water
- ½ tsp salt and more to taste
- 1 tbsp olive oil and more
- ½ onion chopped
- 1½ tbsp tomato paste
- pepper
- 2 tbsp spring onions
- 3 tbsp fresh red bell pepper finely diced
- 2 tbsp fresh parsley
- lemon juice
Instructions
- Prepare the Bulgur: Boil a cup of bulgur with two cups of water and salt for about 5 minutes. Drain the water and let the bulgur drain.
- Sauté onion: In a pan add some olive oil and heat up to medium heat. Add chopped onion and fry until light brown. Add tomato paste and roast. Let cool down.
- Add Vegetables and Herbs: Add bulgur to a mixing bowl. Add onions, bell peppers, parsley, salt and pepper to taste, olive oil and lemon juice and mix well.
- Serve: Kisir is traditionally served on lettuce leaves. You can place a spoonful of the salad on a lettuce leaf and eat it as a wrap or simply use the lettuce as a decorative plate base.
